Gluten free lemon drizzle cake

 

Prepare this delicious recipe in 3 simple steps:

1- Add: the following ingredients to 500g of Nnova Rice Vanilla Cake Premix:

  • 120ml of lemon juice
  • 140ml vegetable oil
  • 3 eggs
  • Finely grated zest of ½ lemon

 2- Mix: Beat for 1 minute at low speed and 4 minutes at high speed.

3- Bake: Deposit the dough in a greased deep baking tin (deeper than

2”), bake for 30 to 40 minutes at 150oC (302oF).

For the drizzle topping:

  • Juice 1 ½ lemons
  • 85g caster sugar

While the cake is still warm, make the lemon drizzle topping. Mix together the sugar and lemon juice and pour over the warm cake!
