This recipe makes 95 mini-muffins
1- Add the following ingredients in a mixer bowl:
500g Nnova Rice Multi- purpose Savoury Premix (previously sifted)
30g baking powder
2- Beat for 3 minutes at low speed.
Add 2 cups (500 ml) dairy free milk or milk substitute and 4 eggs.
Beat additional 3 minutes at medium speed, adding in the end 150 g brie (finally chopped) and 150 g dry cranberries.
Grease a silicone muffin tray with cooking spray and place the mix on it. Be sure to place the muffin tray on a cookie sheet for stability.
3- Bake in a preheat oven at 150oC for 15 minutes.
Let the mini-muffins to cool down and enjoy them!
